Hey Reader,

After being away for so long I wasn't sure what to expect when I hit send on that last email. Hearing back from so many of you was such a relief. And the thing that stood out most was how many of you said the same thing: figuring out what to make for dinner every single night is completely exhausting.

And it is. It really, truly is.

It's not the cooking, it's the deciding (and let's be honest, the cleaning). Every single day, multiple times a day, we need to eat and someone has to figure out what that looks like. By 5pm we're already running on empty and that's exactly when the question hits hardest.

I feel this so much right now. My freezer is practically empty and I miss it more than I expected. Having a stocked freezer doesn't just solve dinner -- it eliminates the decision fatigue entirely. And right now I don't have that safety net.

I'm planning to restock a few of our staples later this month, but in the meantime my go-to meal is always some form of bean tacos. Crispy Refried Bean Tacos, to be specific, is one of my absolute favorites!

They're cheap, protein and fiber packed, and I can generally throw them together in 15 minutes or less. The recipe calls for flour tortillas because they get the crispiest, but I make them with corn all the time!
