Cilantro lime rice (two ways!)


Hey, Reader,

I absolutely love Chipotle's cilantro white rice. It's always fluffy, buttery, slightly salty, bright-flavored, zesty and just so comforting.

I like to make a big batch of this rice and add it to our lunches and dinners throughout the week to make them more filling. And if I make too much, I freeze the excess using my 2-cup Souper Cubes.

In this recipe, I've included cooking instructions for both a rice cooker and Instant Pot.

Personally, I avoid making rice on the stovetop at all costs because I inevitably walk away or get distracted and let it burn to the bottom of the pot 🤦🏻‍♀️.

With a rice cooker especially, I can set it and forget it for hours and still come back to a pot of perfectly cooked rice! Give the method a try yourself with the recipe below.
